Baked chicken nuggets! A healthy solution to fried chicken nuggets

Ingredients
2 chicken fillet or boneless/skinless chicken breast
1 cup corn flakes or bread crumbs (i am using corn flakes in this recipe)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried parsley

Directions

  1. Preheat oven to 200°C. Line baking tray with greased baking sheet or aluminum foil.
  2. Wash the chicken fillet and cut into bite-size.
  3. Crush the corn flakes into fine powder. Add the parsley, garlic powder and onion powder to the corn flakes or bread crumbs.
  4. Roll the chicken in the corn flakes or bread crumbs.
  5. Place the breaded nuggets on the lined baking tray and baked for about 15 minutes, or until the chicken is cooked through.

Cauliflower Parmesan Tots

Mickey mouse cauliflower parmesan tots

Recipe adapted from Goodful

Ingredients 
1 head cauliflower, chopped
1/3 cup breadcrumbs
2 tablespoons dried parsley
½ cup parmesan cheese
2 teaspoon garlic powder (or 1 clove of minced garlic)
¼ teaspoon black pepper
1 egg

Directions

  1. Preheat oven to 200°C.
  2. Chop/ grate the cauliflower into small bits.
  3. Dry the chopped cauliflower with kitchen paper. Transfer to a medium bowl and mix with breadcrumbs, parsley, parmesan, garlic, remaining ¼ teaspoon of salt, pepper, and egg, and mix until well combined.
  4. Divide and shape the mixture into even sized tots and transfer to a baking tray lined with baking sheet/ aluminum foil.
  5. Bake for 20-24 minutes, flipping each halfway through.
  6. Enjoy!
