Healthy and delicious fried rice cooked with organic quinoa grains – rich in protein, fiber, iron and B vitamins! Perfect meal for the whole family.
1/2 cup organic quinoa, rinsed
2 teaspoons oil (i use olive oil)
1 chicken fillet, diced
Vegetables, chopped (i use broccoli and carrot)
1 clove garlic, minced
1 tablespoon low-sodium soy sauce
1 teaspoon sesame oil
1 stalk spring onion, chopped
- Add 1 cup of water and quinoa in a pot and bring to a boil. Reduce heat to a simmer and cover. Cook 10-15 minutes until done. Cover and cool the quinoa in the fridge.
- Heat 1 teaspoon oil in a frying pan/wok over medium high heat. Beat the eggs in a bowl and add to pan. Cook until firm and break egg into pieces with a spatula and transfer to a plate.
- Add remaining oil in the wok. Fry garlic until fragrant. Add chicken and cook until lightly browned. Add the cooled quinoa, soy sauce, sesame oil, spring onion and cooked egg. Stir to combine.
